Scallops are part of the oyster family. They have shells the same way oysters do, and they can propel themselves along the seafloor by opening and closing their shells. Scallops eat by filtering water through their shells so they can eat microscopic plants and animals.

There are two kinds of scallops available for you to cook: wet scallops and dry scallops. Wet scallops are treated with salt and a preservative and then frozen. Dry scallops are not treated at all but sent straight to market. Many people prefer the dry scallop to the wet scallop. Sometimes the preservative of a wet scallop impacts its flavor. Dry scallops are sweeter and more tender. They also can be pan-seared perfectly.

In the United States, there are two varieties of scallops. The Atlantic sea scallop is the larger of the two scallop varieties. It can be up to 9 inches long. These scallops can be found from Canada south to Maryland and Virginia. The bay scallop is smaller, and it is found along the Atlantic coast from Florida to New Jersey.
